ingredients

  • 2 large zucchini, cut into 1 inch pieces
  • 2 large summer squash, cut into 1 inch pieces
  • 4 large red bell peppers, cored and cut into 1 inch pieces
  • 1 large red onion, peeled and cut into thin wedges
  • Avocado oil spray
  • 1/4 teaspoon salt
  • 2 tablespoons finely chopped parsley or basil

Instructions

  1. Preheat the oven to 400 F.
  2. Place all ingredients on 1-2 parchment-lined baking sheets, spray with avocado oil and sprinke with salt. Roast for 25 minutes, stirring at least once while cooking.
  3. Serve with a drizzle of olive oil and finely chopped parsley or basil.
