ingredients
- 2 large zucchini, cut into 1 inch pieces
- 2 large summer squash, cut into 1 inch pieces
- 4 large red bell peppers, cored and cut into 1 inch pieces
- 1 large red onion, peeled and cut into thin wedges
- Avocado oil spray
- 1/4 teaspoon salt
- 2 tablespoons finely chopped parsley or basil
Instructions
- Preheat the oven to 400 F.
- Place all ingredients on 1-2 parchment-lined baking sheets, spray with avocado oil and sprinke with salt. Roast for 25 minutes, stirring at least once while cooking.
- Serve with a drizzle of olive oil and finely chopped parsley or basil.
