ingredients
- 1/2 pound brussels sprouts, trimmed and halved if small, quartered if large
- 1 small head cauliflower, trimmed, cored, and cut into 1-inch florets
- 1/2 pound broccoli, trimmed and cut into 1 inch pieces
- 1 yellow onion, peeled and cut into thin wedges
- Avocado oil spray
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 400 F.
- Place all ingredients on 1-2 parchment-lined baking sheets, spray with avocado oil and sprinkle with salt. Roast for 30 minutes, stirring at least once while cooking.
- Serve with a drizzle of olive oil.
