- 4 ounces smoked salmon
- 1 cup cooked white or brown rice
- 1 cup frozen shelled edamame, thawed and rinsed
- 2 Persian cucumbers, sliced thin
- 1 large carrot, peeled and sliced thin
- ½ cup daikon radish, peeled and sliced thin
- 1 avocado, peeled and sliced
- 2 tablespoons pickled pink ginger
- 2 tablespoons pickled red onions
- 2 tablespoons rice wine vinegar
- 1 tablespoon low sodium soy sauce
- 1 teaspoon sesame seeds
Instructions
- Divide ingredients evenly between 2 bowls.
- In a small bowl, whisk the vinegar and soy sauce and drizzle over bowls. Sprinkle evenly with sesame seeds.
