ingredients

  • 1/2 pound yellow potatoes, scrubbed and cut into 1-inch pieces
  • ½ pound carrots, peeled and cut into 1-inch pieces
  • 1/2 pound red beets, scrubbed and trimmed
  • 1 red onion, peeled and cut into thin wedges
  • Avocado oil spray
  • 1/4 teaspoon salt
  • 1 teaspoon chopped fresh thyme

Instructions

  1. Preheat the oven to 385 F.
  2. Wrap beets individually in foil.
  3. Place all ingredients on 1-2 unlined, clean, rimmed baking sheets, spray with avocado oil and sprinkle with salt and thyme. Roast for 45 minutes, stirring at least once while cooking, and until veggies pierce easily with a fork.
  4. Serve with a drizzle of olive oil.
