ingredients
- 1/2 pound yellow potatoes, scrubbed and cut into 1-inch pieces
- ½ pound carrots, peeled and cut into 1-inch pieces
- 1/2 pound red beets, scrubbed and trimmed
- 1 red onion, peeled and cut into thin wedges
- Avocado oil spray
- 1/4 teaspoon salt
- 1 teaspoon chopped fresh thyme
Instructions
- Preheat the oven to 385 F.
- Wrap beets individually in foil.
- Place all ingredients on 1-2 unlined, clean, rimmed baking sheets, spray with avocado oil and sprinkle with salt and thyme. Roast for 45 minutes, stirring at least once while cooking, and until veggies pierce easily with a fork.
- Serve with a drizzle of olive oil.
