Herby Shrimp Salad

ingredients
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra virgin olive oil
- 1 pound large shrimp, peeled and deveined (or crab meat)
- 1 large avocado, cubed
- ½ cup chopped celery
- 2 tablespoons red onion, chopped
- 1 Fresno pepper, chopped (optional)
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh chives, chopped
- 1/2 teaspoon salt, or to taste
Instructions
- Bring a large pot of water to a boil and add the shrimp to cook for 2 to 3 minutes, until just opaque and cooked through. Don't overcook or they will become rubbery. Transfer to an ice bath to stop the shrimp from cooking.
- Chop the shrimp and transfer to a medium bowl. Add the lemon juice, olive oil, celery, pepper, onion, dill, chives, and salt. Combine well.
- Chill in the refrigerator until ready to eat.
