Plant-Powered Chocolate Mousse

ingredients

  • 3.5 ounces dark chocolate (70%), chopped
  • 12 oz silken tofu
  • 1 tbsp of maple syrup
Toppings
  • 1/4 cup raspberries
  • pinch flaky sea salt
  • 2 teaspoons dark chocolate shavings

Instructions

  1. In a glass bowl, microwave the chocolate for 1 minute. Continue heating in 30 second intervals until completely melted. Allow to cool a bit.
  2. In a blender or food processor, combine the melted chocolate mixture, silken tofu, maple syrup, Blend until smooth and creamy.
  3. Divide the mousse into 4 serving glasses.
  4. Refrigerate for at least 1-2 hours to set.
  5. Before serving, top each mousse with raspberries, a pinch of flaky sea salt, and dark chocolate shavings.
