Plant-Powered Chocolate Mousse

ingredients
- 3.5 ounces dark chocolate (70%), chopped
- 12 oz silken tofu
- 1 tbsp of maple syrup
Toppings
- 1/4 cup raspberries
- pinch flaky sea salt
- 2 teaspoons dark chocolate shavings
Instructions
- In a glass bowl, microwave the chocolate for 1 minute. Continue heating in 30 second intervals until completely melted. Allow to cool a bit.
- In a blender or food processor, combine the melted chocolate mixture, silken tofu, maple syrup, Blend until smooth and creamy.
- Divide the mousse into 4 serving glasses.
- Refrigerate for at least 1-2 hours to set.
- Before serving, top each mousse with raspberries, a pinch of flaky sea salt, and dark chocolate shavings.
