ingredients
- 4 ounces button or cremini mushrooms, sliced thin
- Avocado oil spray
- 4 cloves garlic, minced
- 1 medium yellow onion, fine chop
- 2 large carrots, fine chop
- 3 medium stalks celery, fine chop
- 15 ounce can whole peeled tomatoes, chopped
- 4 cups chicken bone broth + 2 cups water
- 2 15 ounce cans cannellini beans, drained and rinsed
- 2 cups lacinato (dino) kale, chopped
- 2 cups savoy, napa, or green cabbage, shredded
- 1 teaspoon salt
Instructions
- In a large pan, heat avocado oil on medium-high and add mushrooms. Spread them out to allow as much space as possible between pieces. Cook undisturbed for about 3 minutes, to allow a golden brown. Toss the mushrooms and cook a few minutes more until browned on both sides. Set aside.
- In a large pot, heat olive oil over medium and add garlic. Cook for one minute, then add onion and cook for a few minutes more, until onions begin to soften.
- Add celery and carrots, cook until they're sweating - about 3 minutes (don't allow anything to brown). Add tomatoes, bone broth, water, and cooked mushrooms. Bring to a boil, and simmer for 20 minutes.
- Add the beans, cook 5 minutes.
- Add the kale and cabbage, cook until fully wilted - about 3 minutes.
- Add salt, and adjust to taste.
