ingredients

  • 4 ounces button or cremini mushrooms, sliced thin
  • Avocado oil spray
  • 4 cloves garlic, minced
  • 1 medium yellow onion, fine chop
  • 2 large carrots, fine chop
  • 3 medium stalks celery, fine chop
  • 15 ounce can whole peeled tomatoes, chopped
  • 4 cups chicken bone broth + 2 cups water
  • 2 15 ounce cans cannellini beans, drained and rinsed
  • 2 cups lacinato (dino) kale, chopped
  • 2 cups savoy, napa, or green cabbage, shredded
  • 1 teaspoon salt

Instructions

  1. In a large pan, heat avocado oil on medium-high and add mushrooms. Spread them out to allow as much space as possible between pieces. Cook undisturbed for about 3 minutes, to allow a golden brown. Toss the mushrooms and cook a few minutes more until browned on both sides. Set aside.
  2. In a large pot, heat olive oil over medium and add garlic. Cook for one minute, then add onion and cook for a few minutes more, until onions begin to soften.
  3. Add celery and carrots, cook until they're sweating - about 3 minutes (don't allow anything to brown). Add tomatoes, bone broth, water, and cooked mushrooms. Bring to a boil, and simmer for 20 minutes.
  4. Add the beans, cook 5 minutes.
  5. Add the kale and cabbage, cook until fully wilted - about 3 minutes.
  6. Add salt, and adjust to taste.
