- 1 whole egg + 2 more egg whites
- 1 tablespoon unsweetened milk of choice
- Pinch of sea salt
- 1 teaspoon extra-virgin olive oil
- 1/4 avocado, finely chopped
- Handful of arugula, chopped
- 2 oz smoked salmon
- 1 tablespoon chopped parsley
- Squeeze of lemon juice
Instructions
- Whisk the eggs, milk, and salt
- Heat the oil in a medium skillet over medium heat. Pour the egg mixture into the pan, tilting the pan to ensure it covers the base, and cook until lightly golden brown on the bottom before flipping it to cook the other side.
- Transfer to a plate; add the avocado and arugula. Top with smoked salmon, parsley, and lemon juice. Roll up the wrap, cut down the middle, and serve.
