Perfect Scrambled Tofu

Scrambled Tofu

ingredients
- 1 tablespoon extra-virgin olive oil
- 2 garlic cloves, grated with a microplane
- ¼ teaspoon turmeric (optional for color)
- 1 (14-ounce) box extra-firm tofu, drained and crumbled
- ¼ teaspoon salt or to taste
- Freshly ground black pepper, to taste
Instructions
- Heat the olive oil in a large nonstick pan over high heat and gently stir in the garlic and turmeric, stirring until fragrant and not allowing to brown, less than 1 minute.
- Add the tofu, turn down the heat to medium, and cook, stirring until beginning to brown, about 5 minutes. Add any veggies you like. Season to taste with salt and pepper and serve.
