Scrambled Eggs with Fresh Salsa & Avocado in a Whole Grain Tortilla

ingredients

  • 2 eggs
  • 1 teaspoon olive or avocado oil
  • 1/4 avocado
  • 2 tablespoon Perfect Salsa Roja
  • 1 whole grain tortilla, 6"
  • 2 tablespoons shredded white cheddar cheese (optional)

Instructions

  1. Whisk eggs. Heat olive oil in a skillet and cook the eggs. Place in a bowl and set to the side.
  2. Wipe down the pan and heat the tortilla with cheese sprinkled on top, if desired.
  3. Once heated and more pliable, add eggs, avocado, and salsa. Wrap into a burrito.
