Breakfast Tortilla
Scrambled Eggs with Fresh Salsa & Avocado in a Whole Grain Tortilla

ingredients
- 2 eggs
- 1 teaspoon olive or avocado oil
- 1/4 avocado
- 2 tablespoon Perfect Salsa Roja
- 1 whole grain tortilla, 6"
- 2 tablespoons shredded white cheddar cheese (optional)
Instructions
- Whisk eggs. Heat olive oil in a skillet and cook the eggs. Place in a bowl and set to the side.
- Wipe down the pan and heat the tortilla with cheese sprinkled on top, if desired.
- Once heated and more pliable, add eggs, avocado, and salsa. Wrap into a burrito.
