This works just as well for white potatoes.
ingredients
- 4 medium russet potatoes (1 1/4 pounds total)
- 4 teaspoons extra virgin olive oil
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 425 F.
- Use a fork to poke a few holes into the potatoes. Place on a parchment-lined baking sheet, rub with olive oil, and sprinkle liberally with sea salt all over.
- Bake 45 to 60 minutes, or until the potato is fork-tender and the skin is crisp.
- Slice open each potato and fluff the insides.
