Pomegranate Granita
Serves 6.
INGREDIENTS:
2 cups fresh pomegranate juice
1 tablespoon fresh lemon juice
1/4 cup light agave nectar or honey
1/4 cup fresh pomegranate seeds
DIRECTIONS:
Whisk together the juices and agave or honey and pour into an 8-inch metallic pie pan or another similar-sized vessel. Freeze for 1 hour
Take out of the freezer and scrape with a fork. Repeat this process every 15 minutes for the next 2 hours. You should end up with a solid mixture that resembles flakes of sorbet.
Alternatively, you can freeze it overnight and scrape before serving.
To serve, scoop into 6 glasses or bowls and sprinkle with the fresh pomegranate seeds.
