Maple-Dijon Roasted Winter Vegetables

Serves 4.

INGREDIENTS:
3 tablespoons Vermont maple syrup
3 tablespoons Dijon mustard
3 tablespoons extra virgin olive oil
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper
1 large sweet potato, peeled and cut into 3-inch sticks about 1/2-inch thick (like French fries)
1 butternut squash, peeled and cut into 3-inch sticks about 1/2-inch thick (or buy precut)
4 carrots, peeled and cut into 3-inch sticks about 1/2 inch thick

DIRECTIONS:

  • Preheat the oven to 425ºF

  • Mix together the maple syrup, mustard, olive oil, salt, and pepper. Toss together with the vegetables on a cookie sheet.

  • Roast, stirring occasionally, until browned and cooked through, about 25 minutes.
