PICKLED SHALLOTS
Makes 1 cup
One of my favorite tips for upping your nutrition game is to add alliums everyday. This means garlic, onions, leeks, and shallots. These pungent beauties help protect against cardiovascular disease by lowering cholesterol and blood pressure and pack a serious punch of antioxidants. This is one tasty way to fit them in. Pickled alliums are a nice addition to salads and tacos, and a flavor bomb condiment with fish, chicken or beef.
INGREDIENTS:
1 cup shallots, sliced
1 cup red wine or sherry vinegar
1/4 t sea salt
1 T sugar
DIRECTIONS:
Place all ingredients in a bowl and stir to mix thoroughly.
Cover and refrigerate overnight.
