White Bean, Tuna & Arugula Salad

- 2 tablespoons extra-virgin olive oil
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- ¼ teaspoon black pepper
- 1 can tuna, no added salt, packed in water, drained
- 1 can white beans, drained and rinsed
- ¼ cup thinly sliced red onion
- 3 cups firmly packed baby arugula
Instructions
- Combine oil, lemon zest, lemon juice, mustard, salt, and pepper in a large bowl, stirring with a whisk. Add tuna, beans and onion; toss well to coat. Add arugula; toss gently to combine.
