ingredients
- Two whole grain pitas, toasted and cut into bite-sized pieces (or use pita chips)
- 12 ounces fresh romaine lettuce, chopped (about 1 medium head of lettuce)
- 1 cup halved cherry tomatoes
- 1 cup thinly sliced Persian cucumber
- 1/2 cup chopped red onion (about 1 small onion)
- ½ cup chopped radish (about 3 medium)
- ¼ cup chopped fresh mint leaves
- ½ cup crumbled feta (optional)
- ½ cup Lemon Vinaigrette (link)
Instructions
- Make the salad dressing as directed and set aside. In a large serving bowl, combine the chopped lettuce, tomatoes, cucumber, onion, radish, mint, optional parsley and feta (if using), and toasted pita, and toss with dressing.
