  • 2 large heirloom or slicer tomatoes, sliced super-thin (1/8")
  • 1/2 small red onion, sliced thin
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill or chives
  • 1 tablespoon extra virgin olive oil (quality & flavor matter here)
  • 1/2 teaspoon flaked sea salt

Instructions

  1. On a large plate, or in a glass storage container, layer tomato, onion, herbs, olive oil, and salt.
  2. Add to sandwiches, salads, cooked grains or beans, eggs, or sliced bread.
