Salmon & Sweet Potato Bowl

ingredients
- 1 full recipe Citrus Salmon Bites (link)
- 1 lb sweet potato, peeled and cubed
- Avocado oil spray
- 1/4 teaspoon salt
- 1 small red onion, sliced thin
- 5 ounces mixed favorite leafy greens (spinach, arugula, romaine, etc)
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh chives
- 4 servings Green Tahini (link)
Instructions
- Preheat oven to 400 F
- Prepare Citrus Salmon Bites according to recipe instructions
- Meanwhile, in a heavy bottomed pan, toss sweet potato chunks with avocado oil spray and salt. Place in oven and bake for 25-35 minutes, tossing a few times for even browning.
- While salmon and potatoes are cooking, in a large bowl, add greens, onions, and herbs.
- When cooked, allow salmon and potatoes to cool and add to greens and herbs. Toss with 4 servings of Green Tahini dressing (or dressing of choice - Cilantro-Lime is also nice with this salad).
