Soccata (Chickpea Pancake)

ingredients

  • 1 cup chickpea flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin or coriander
  • 2 teaspoons fresh lemon zest
  • 1 cup warm water
  • 1 tablespoon extra virgin olive oil
  • Avocado oil spray

Instructions

  1. Preheat the oven to 425F.
  2. In a mixing bowl, combine the chickpea flour, spices, baking powder, and zest. Slowly incorporate the warm water and olive oil and whisk until smooth.
  3. Spray two small skillets (8" for individual servings) or one large skillet (12" to cut for 2 servings) with avocado oil. Divide the batter between the two skillets and place in the oven side by side for about 10 minutes, flip and cook for 5 minutes more or until golden brown.
  4. Top socca with a simple arugula salad, sauteed greens, a fried egg, roasted veggies, tzaziki, chili oil drizzle, or anything you like!
