ingredients
- 1 cup chickpea flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cumin or coriander
- 2 teaspoons fresh lemon zest
- 1 cup warm water
- 1 tablespoon extra virgin olive oil
- Avocado oil spray
Instructions
- Preheat the oven to 425F.
- In a mixing bowl, combine the chickpea flour, spices, baking powder, and zest. Slowly incorporate the warm water and olive oil and whisk until smooth.
- Spray two small skillets (8" for individual servings) or one large skillet (12" to cut for 2 servings) with avocado oil. Divide the batter between the two skillets and place in the oven side by side for about 10 minutes, flip and cook for 5 minutes more or until golden brown.
- Top socca with a simple arugula salad, sauteed greens, a fried egg, roasted veggies, tzaziki, chili oil drizzle, or anything you like!
