Shrimp & Tofu Noodle Bowl with Shiitake Dashi

ingredients
- Avocado oil spray
- 10 medium shrimp, peeled and deveined
- 6 medium shiitake mushrooms, stemmed and sliced thin
- 2 ounces rice noodles
- 1 cup bok choy, cut into 1-inch pieces
- 1 medium carrot, peeled and cut into matchsticks
- 4 scallions, sliced thin
- 3 cups Shiitake Dashi Broth (link)
Instructions
- Cook noodles according to package instructions. Drain.
- Bring 3 cups Dashi to a simmer
- Spray a large skillet with oil, add mushrooms and shrimp. Cook until shrimp are cooked through on both sides and the mushrooms are golden (about 4 minutes).
- In each bowl, layer noodles, shrimp, mushrooms, and vegetables, pour over with ½ of the dashi.
