Shrimp & Tofu Noodle Bowl with Shiitake Dashi

ingredients

  • Avocado oil spray
  • 10 medium shrimp, peeled and deveined
  • 6 medium shiitake mushrooms, stemmed and sliced thin
  • 2 ounces rice noodles
  • 1 cup bok choy, cut into 1-inch pieces
  • 1 medium carrot, peeled and cut into matchsticks
  • 4 scallions, sliced thin
  • 3 cups Shiitake Dashi Broth (link)

Instructions

  1. Cook noodles according to package instructions. Drain.
  2. Bring 3 cups Dashi to a simmer
  3. Spray a large skillet with oil, add mushrooms and shrimp. Cook until shrimp are cooked through on both sides and the mushrooms are golden (about 4 minutes).
  4. In each bowl, layer noodles, shrimp, mushrooms, and vegetables, pour over with ½ of the dashi.
