- 1 cup cooked brown rice
- 2 scallions, diced
- 8 ounces poached chicken breasts, shredded
- Butter lettuce leaves
- Fresh cilantro sprigs for garnish
Instructions
- Combine the kimchi, brown rice, chicken, and scallions, in a medium bowl, mix thoroughly.
- Arrange lettuce leaves on two plates. Spoon the chicken mixture among the lettuce leaves and garnish with cilantro.
