  • ½ cup chopped kimchi
  • 1 cup cooked brown rice
  • 2 scallions, diced
  • 8 ounces poached chicken breasts, shredded
  • Butter lettuce leaves
  • Fresh cilantro sprigs for garnish

Instructions

  1. Combine the kimchi, brown rice, chicken, and scallions, in a medium bowl, mix thoroughly.
  2. Arrange lettuce leaves on two plates. Spoon the chicken mixture among the lettuce leaves and garnish with cilantro.
