Heirloom Tomato Sandwich

ingredients

  • 1 cup canned cannellini beans, drained and rinsed
  • ½ medium red onion, thinly sliced
  • 1 tablespoon red wine vinegar or lemon juice
  • ¼ teaspoon salt
  • Freshly ground pepper
  • 8 1 ounce slices of French bread, lightly toasted
  • 2 large heirloom tomatoes, sliced thin
  • 2 teaspoons olive oil
  • ½ teaspoon flaky salt
  • 4 tablespoons BRAIN SPACE Perfect Pesto
  • 1 ounce arugula, baby spinach or romaine lettuce

Instructions

  1. In a bowl, combine beans, vinegar, salt, and pepper, set aside.
  2. On 4 toasted bread slices, divide tomato slices and drizzle olive oil, and sprinkle flakey salt.
  3. On the other 4 slices spread the pesto.
  4. Top the tomatoes with bean and onion mixture.
  5. Add greens, and put the sandwich slices together.
