Heirloom Tomato Sandwich

ingredients
- 1 cup canned cannellini beans, drained and rinsed
- ½ medium red onion, thinly sliced
- 1 tablespoon red wine vinegar or lemon juice
- ¼ teaspoon salt
- Freshly ground pepper
- 8 1 ounce slices of French bread, lightly toasted
- 2 large heirloom tomatoes, sliced thin
- 2 teaspoons olive oil
- ½ teaspoon flaky salt
- 4 tablespoons BRAIN SPACE Perfect Pesto
- 1 ounce arugula, baby spinach or romaine lettuce
Instructions
- In a bowl, combine beans, vinegar, salt, and pepper, set aside.
- On 4 toasted bread slices, divide tomato slices and drizzle olive oil, and sprinkle flakey salt.
- On the other 4 slices spread the pesto.
- Top the tomatoes with bean and onion mixture.
- Add greens, and put the sandwich slices together.
