  • 3 ounces poached chicken, shredded
  • handful arugula, chopped
  • 1/3 cup savoy cabbage, shredded
  • 1/3 cup fennel, thinly sliced
  • 1/4 avocado, cubed
  • 2 tablespoons BRAIN SPACE Sherry Shallot Dressing

Instructions

  1. Add chicken, arugula, cabbage, fennel, avocado, and dressing to a bowl and mix to combine.
  2. Scoop a bit of potato flesh out of the baked potato, and add salad.
