- 1 8 ounce sweet potato, baked
- 3 ounces poached chicken, shredded
- handful arugula, chopped
- 1/3 cup savoy cabbage, shredded
- 1/3 cup fennel, thinly sliced
- 1/4 avocado, cubed
- 2 tablespoons BRAIN SPACE Sherry Shallot Dressing
Instructions
- Add chicken, arugula, cabbage, fennel, avocado, and dressing to a bowl and mix to combine.
- Scoop a bit of potato flesh out of the baked potato, and add salad.
