- 3 ounces poached chicken, shredded
- 1/3 cup red cabbage, shredded
- 1 small bell pepper, sliced into matchsticks
- 1 small carrot, cut into matchsticks
- 2 green onions, sliced
- 2 tablespoons BRAIN SPACE Carrot-Ginger Dressing
Instructions
- Add chicken, cabbage, peppers, carrot, onions, and dressing to a bowl and mix to combine.
- Scoop a bit of potato flesh out of the baked potato, and add salad.
