  • 1/3 cup red cabbage, shredded
  • 1 small bell pepper, sliced into matchsticks
  • 1 small carrot, cut into matchsticks
  • 2 green onions, sliced
  • 2 tablespoons BRAIN SPACE Carrot-Ginger Dressing

Instructions

  1. Add chicken, cabbage, peppers, carrot, onions, and dressing to a bowl and mix to combine.
  2. Scoop a bit of potato flesh out of the baked potato, and add salad.
