Mushroom-Thyme Sauce

Try this gravy-like sauce with your turkey for the holidays!

INGREDIENTS:
1 pound cremini mushrooms, sliced
6 cups chicken broth
4 springs of thyme
1 head of garlic, cut crosswise
1 yellow onion, quartered
10 peppercorns
1 bay leaf

DIRECTIONS:

  • Place broth, garlic, onion, thyme, bay and peppercorns in a deep pot. Bring to a boil and simmer for 45 minutes or until reduced by 1/3..

  • Meanwhile sautee cremini mushrooms in a pan with olive oil, salt & pepper until golden.

  • Strain the solids from the broth and allow to cool.

  • Add the cremini mushrooms to the broth and place in a blender. Puree until silky smooth.
