This is my go-to meal prep salad. This batch makes 4 days of portions for one person, or it serves four. Feel free to switch-up the veggies to match your preferences. It’s a perfect nutrient-rich foundation for adding any protein and dressing you like.

ingredients

  • 2 medium carrots, peeled and julienned (about 1 1/2 cups)
  • 1 celery heart, diced (about 1 ½ cups)
  • 1 small red onion, diced (about ¾ cup)
  • 1 bunch radishes, diced (about 1 cup)
  • 1 large fennel bulbs, diced (about 1/2 cup)
  • 3 Persian cucumbers, seeded and diced (about 1 cup)
  • 2 cups red cabbage, shredded
  • 1 cup chopped parsley

Instructions

  1. Place all ingredients in a bowl, and toss to combine. Keep in a large, covered glass container in the refrigerator for 3-4 days.
