Tofu
- 1 recipe Perfect Golden Tofu (link)
- 1 cup shelled edamame
- 2 cups broccoli sprouts (or any microgreens)
- 1 cup cucumber, small dice
- 1 cup cherry tomatoes, quartered
- 1 avocado, cubed
- 4 scallions (white and green parts), thinly sliced
- 1/4 cup chopped fresh mint
- 1 cup packed of chopped fresh parsley
Dressing
- 2 large garlic cloves, grated
- ¼ cup fresh lemon juice
- ¼ cup extra-virgin olive oil
- ¼ teaspoon salt, or to taste
Instructions
- Place the sprouts in a large bowl. Add the tofu, edamame.cucumber, tomatoes, scallions, mint, and parsley. Mix well.
- Whisk together the dressing ingredients. Pour the dressing over the vegetable mixture and toss to coat. Add more salt and lemon juice to the dressing, if desired. Serve the salad immediately or refrigerate to let the flavors meld.
- Serve with a toasted pita and 1 oz of feta for each person.
