Shiitake Dashi
A serving is 1 cup.
ingredients
- 2 cups dried shiitakes
- 16 cups water
- ¼ cup tamari
- 2 ounces kombu seaweed
Instructions
- Combine the shiitakes, tamari, kombu seaweed, and water in a large stockpot over high heat. Bring to a boil and simmer for 20 minutes.
- Remove from the heat and let stand for 5 minutes.
- Strain, cool, and store for use as needed.
