Shiitake Dashi

A serving is 1 cup.

ingredients

  • 2 cups dried shiitakes
  • 16 cups water
  • ¼ cup tamari
  • 2 ounces kombu seaweed

Instructions

  1. Combine the shiitakes, tamari, kombu seaweed, and water in a large stockpot over high heat. Bring to a boil and simmer for 20 minutes.
  2. Remove from the heat and let stand for 5 minutes.
  3. Strain, cool, and store for use as needed.
