Salmon Tacos with Cucumber-Cabbage Slaw

ingredients
- 1 pound salmon, skinned & cubed
- 2 tablespoons fresh lime juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cumin or coriander
- 1/4 teaspoon salt
- Avocado oil spray
- 4 Persian cucumbers, sliced thin
- 2 c green cabbage, shredded
- 1/2 c red onion, sliced thin
- 1/2 bunch cilantro, chopped
- 2 medium jalapeno peppers, sliced thin
- 1/4 cup fresh lime juice
- 1/4 teaspoon salt
- 8 store-bought whole wheat 6" tortillas
- 1 c fresh, store-bought fresh guacamole
Instructions
For the salmon & slaw
- Preheat an air fryer to 350F, place salmon on a piece of parchment paper and season with lime juice, salt, and avocado oil spray. Roast for 15 minutes or until cooked through. Alternatively heat a large pan on the stove, spray with oil, and cook salmon on medium heat until browned on all sides.
- Meanwhile, prepare the vegetables and toss in a bowl with lime juice and salt.
- Make Perfect Guacamole
- Divide salmon, slaw, and guacamole evenly among 8 tortillas & serve.
