Refreshing Noodles & Edamame

Add extra protein with crispy tofu, sautéed shrimp, or flaked salmon.

ingredients

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 inch piece fresh ginger, peeled and grated
  • 1/2 small onion, sliced
  • 1 tablespoon olive oil
  • pinch salt
  • 2 ounces dry flat rice noodles
  • 1/2 cup shelled edamame
  • 1 Persian cucumber, cut into matchsticks
  • 1 small green apple cut into matchsticks
  • 1 small red bell pepper, cut into matchsticks or one Fresno pepper if you'd like it spicy
  • 1 tablespoon chopped mint
  • 1/2 teaspoon sesame seeds

Instructions

  1. In a small bowl, whisk together vinegar, sugar, and ginger until sugar dissolves. Add sliced onion and set aside while prepping other ingredients (alternatively, use pickled red onions from a jar)
  2. Cook noodles according to package instructions. Rinse under cold water and drain.
  3. In a large bowl, combine noodles, edamame, vegetables and herbs.
  4. Remove onions from pickling liquid and strain the liquid of any solids. Add 1 tablespoon olive oil and a pinch of salt, whisk.
  5. Pour dressing over noodles, toss to combine.
  6. Divide into 2 bowls and top with sesame seeds and a squeeze of lime.
