Perfect Roasted Fish

ingredients

  • 2 4-ounce fish filets (skin on)
  • 2 spritzes of avocado oil spray
  • Juice from ½ lemon
  • Sea salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat oven to 400F.
  2. Rinse the fish filets, pat them dry, and season with lemon juice, a sprinkle of salt, and a spritz of avocado oil.
  3. Heat a 10-inch skillet with a spray of avocado oil on the stove top. When the pan is hot, place the fish filets flesh-side down and let them sit undisturbed for 2 minutes or until golden.
  4. Carefully slide a spatula underneath the filets and flip them.
  5. Place the filets on a baking sheets line with foil. Put the baking sheet in the oven for 10 to 15 minutes depending upon thickness of fish.
  6. When you take the filets out of the oven, turn them on its side and scrape the skin off with a knife.
