Kimchi-Cauliflower Fried Rice

ingredients

  • Avocado oil spray
  • 16 ounces frozen riced cauliflower, thawed and squeezed of water
  • 2 teaspoons toasted sesame oil
  • 8 ounces baby green peas, thawed
  • 1/3 cup kimchi, chopped
  • 2 green onions, thinly sliced
  • ¼ cup fresh cilantro, chopped

Instructions

  1. In a large pan, heat oil and add riced cauliflower. Cook cauliflower until just starting to crisp and brown. Add kale, stir until just wilted. Remove from heat.
  2. Add peas, and mix to warm them through but not let them lose their bright green and crispness.
  3. Mix in kimchi and divide among 4 plates, top with onions and cilantro
