Kimchi-Cauliflower Fried Rice

ingredients
- Avocado oil spray
- 16 ounces frozen riced cauliflower, thawed and squeezed of water
- 2 teaspoons toasted sesame oil
- 8 ounces baby green peas, thawed
- 1/3 cup kimchi, chopped
- 2 green onions, thinly sliced
- ¼ cup fresh cilantro, chopped
Instructions
- In a large pan, heat oil and add riced cauliflower. Cook cauliflower until just starting to crisp and brown. Add kale, stir until just wilted. Remove from heat.
- Add peas, and mix to warm them through but not let them lose their bright green and crispness.
- Mix in kimchi and divide among 4 plates, top with onions and cilantro
