Ginger-Citrus Chicken Meatballs

ingredients

  • 1 pound ground chicken breast
  • 2 teaspoons olive oil
  • 4 cloves garlic, grated
  • 2 teaspoons fresh ginger, grated (or 1/2 teaspoon ground)
  • 4 tablespoons chopped fresh cilantro
  • zest and juice of 1 lime
  • zest and juice of one orange
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven or your air fryer to 375 F.
  2. Add all ingredients to a large bowl, and thoroughly combine.
  3. Using wet hands, roll the mixture into 16 balls (4 balls per serving) and place them on either a parchment-lined baking sheet or a fold of parchment paper for the air fryer.
  4. Bake the balls in the oven for 20-25 minutes, flipping once, or in the air fryer for 15 minutes, or until the internal temperature measures 165 F. I prefer the air fryer for meatballs that don't contain eggs or breadcrumbs because they hold their round shape.
  5. Serve with pasta or in a veggie batch.
