Eggs, Grains & Greens Glow Bowl

Eggs with Grains & Greens

You can do scrambled, chopped hard boiled, or sunny side up.

ingredients

  • 1 cup cooked quinoa (or other grain)
  • 2 teaspoons extra-virgin olive oil
  • ½ cup thinly sliced leeks
  • 2 cups chopped chard leaves (or baby spinach, arugula, watercress, kale, dandelion greens)
  • 1/8 teaspoon salt
  • 2 large eggs
  • Freshly ground pepper to taste

Instructions

  1. Bring a large saucepan of water to a simmer.
  2. Meanwhile, in a medium nonstick skillet, heat the olive oil over medium-low heat. Add the leeks and cook for 3 minutes, then stir in the chard and a large pinch of salt.
  3. Crack the eggs into a small ramekin and add them one at a time to the simmering water, using a large, slotted spoon to carefully make sure they are not sticking to the bottom of the saucepan. Cook for 2½ minutes, or until the white is fully cooked but the yolk still feels tender when gently pressed with a fingertip.
  4. Divide the greens between two plates, top each with a poached egg, and sprinkle with salt and pepper.
