ingredients
- 6 large eggs, hardboiled and halved
- 1 ripe avocado, peeled, pitted, and cubed
- 1 lemon or lime, juiced
- 2 tablespoons red onion, finely chopped
- 1 teaspoon garlic powder
- salt and pepper, to taste
Instructions
- In a bowl, combine egg yolks, avocado, citrus juice, garlic powder, and mustard. Whisk to combine thoroughly. Add a bit of olive oil or water to thin if needed. Season with salt and pepper to taste.
- Fill the egg halves with the avocado mixture. Refrigerate & enjoy.
