ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons fresh lemon juice (more to taste)
  • 1/4 cup Aquafaba Mayo (link) or White Bean Hummus (link), thinned with 2 tablespoons water
  • 1/4 cup chopped celery
  • 1/4 cup chopped red onion
  • 1/2 teaspoon garlic powder
  • 1 sheet nori seaweed, crumbled fine (optional)
  • ¼ teaspoon salt
  • Freshly ground pepper

Instructions

  1. Mash chickpeas in a medium-size bowl until desired consistency. Alternatively use a food processor and pulse (be careful to not turn it into a puree).
  2. Add the remaining ingredients and mix well, taste and adjust lemon juice and salt.
