Broccoli & Cauliflower Dilly Rice

ingredients

  • 1 1/2 cups riced broccoli (purchase frozen, or chop broccoli florets small and rice in a food processor)
  • 1 1/2 cups riced cauliflower (purchase frozen, or chop broccoli florets small and rice in a food processor)
  • 1 cup cooked brown rice or quinoa (purchase precooked frozen, or cook according to package instructions)
  • 2 teaspoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • Freshly ground pepper
  • 2 tablespoons finely chopped fresh dill
  • 2 teaspoons lemon zest

Instructions

  1. If purchasing frozen, thaw broccoli, cauliflower, and rice.
  2. Heat the oil in a large pan on medium-high, add riced broccoli, riced cauliflower, brown rice or quinoa, salt, and cumin. Cook, stirring, until slightly browned.
  3. Remove from heat and stir in lemon zest and dill. Adjust seasonings.
