Migas
Serves 1.
INGREDIENTS:
1 tablespoon avocado oil
8 corn tortilla chips
2 tablespoons diced white onion
2 large eggs
Salt and freshly ground black pepper
2 tablespoons grated white cheddar
2 tablespoons chopped fresh cilantro
Top with hot sauce, 1/4 cup fresh salsa, guacamole, 2 tablespoons sliced jalapeño, 1/4 avocado, 1/4 cup cooked black beans
DIRECTIONS:
In an 8-inch nonstick pan, heat the oil over medium-high heat. When the oil is hot, add the white onion and cook for about 1 to 2 minutes or until onion starts to soften. Add chips.
Crack in eggs, season with salt and pepper, and use a spatula to stir everything together. Cook for another 1 to 2 minutes, until the eggs are almost cooked through.
Stir in cheese and cilantro, and transfer to a plate.
Garnish with hot sauce, fresh salsa, jalapeños, avocado, and/or black beans, if desired.
