Fried Egg Sandwich

Serves 4.

INGREDIENTS:
1 tablespoon olive oil
6 slices of prosciutto
1 cup finely grated Gruyère cheese or cream cheese
4 large eggs
Salt and freshly ground black pepper
4 slices whole grain bread
4 small handfuls of arugula or baby spinach

DIRECTIONS:

  • Using olive oil in the pan, make four 1/4-cup piles of cheese in a pan set over medium-high heat. Crack one egg directly over each pil of cheese, season generously with salt and pepper, and fry until the whites are set and the yolks are still runny. Cover the pan with a lid if you like yolks more cooked.

  • While the eggs fry, toast the bread.

  • To assemble, spread each piece of toast with cream cheese, if using. Top the toast with arugula and 1-1/2 slices of prosciutto, and finish with the crispy egg and cheese combo.
