Greek Omelet

INGREDIENTS:
2 eggs
1 teaspoon olive or avocado oil
2 tablespoons feta cheese
1/2 cup fresh spinach
1/4 cup chopped tomatoes and black olives

DIRECTIONS:

  • Whisk eggs together. In a pan over medium-low heat, add olive oil. Once oil is heated, pour in whisked eggs and top with cheese and spinach. Once the eggs begin to firm up, flip one side over.

  • Remove from heat and transfer to a plate. Top with tomatoes and black olives.
