Greek Omelet
INGREDIENTS:
2 eggs
1 teaspoon olive or avocado oil
2 tablespoons feta cheese
1/2 cup fresh spinach
1/4 cup chopped tomatoes and black olives
DIRECTIONS:
Whisk eggs together. In a pan over medium-low heat, add olive oil. Once oil is heated, pour in whisked eggs and top with cheese and spinach. Once the eggs begin to firm up, flip one side over.
Remove from heat and transfer to a plate. Top with tomatoes and black olives.
