Crispy Roasted Mushrooms
Serves 8.
INGREDIENTS:
1 lb roughly chopped mixed mushrooms (oyster, cremini, and shiitake)
1 lb button mushrooms (halved or quartered if large)
1/2 cup olive oil
6 thyme sprigs
Salt and pepper, to taste
DIRECTIONS:
Preheat oven to 450ºF.
Toss mushrooms with olive oil and thyme. Season with slat and pepper
Roast on 2 rimmed baking sheets, tossing once until golden brown and crispy, 30 to 35 minutes.
Garnish with fresh thyme, if desired. Serve warm.
