Salmon Skewers with Tzatziki

ingredients

  • 1 pound salmon, skinned and cut into 1 ½ inch cubes
  • 2 large zucchini, ends trimmed, cut in ½ lengthwise, and cut into 1-inch chunks
  • 1 large red onion, peeled and cut into 1 inch chunks
  • 1 tablespoon olive oil
  • ½ teaspoon cumin or coriander
  • Pinch ground cayenne pepper
  • ½ teaspoon salt
  • Freshly ground pepper
  • 1 cup tzatziki (link)

Instructions

  1. Soak 8 wooden skewers in water for 20 minutes. Meanwhile, in a bowl toss salmon, zucchini and onion with olive oil, cumin or coriander, cayenne, and salt. Thread salmon and vegetables onto skewers, alternating the salmon, zucchini, and onion.
  2. Heat a grill pan or outdoor grill with avocado oil. Place skewers onto hot grill (pan) and cook, turning every few minutes until fish is cooked through and opaque (about 15-minutes).
  3. Serve 2 skewers per person with ¼ cup tzatziki.
