Salmon Skewers with Tzatziki

ingredients
- 1 pound salmon, skinned and cut into 1 ½ inch cubes
- 2 large zucchini, ends trimmed, cut in ½ lengthwise, and cut into 1-inch chunks
- 1 large red onion, peeled and cut into 1 inch chunks
- 1 tablespoon olive oil
- ½ teaspoon cumin or coriander
- Pinch ground cayenne pepper
- ½ teaspoon salt
- Freshly ground pepper
- 1 cup tzatziki (link)
Instructions
- Soak 8 wooden skewers in water for 20 minutes. Meanwhile, in a bowl toss salmon, zucchini and onion with olive oil, cumin or coriander, cayenne, and salt. Thread salmon and vegetables onto skewers, alternating the salmon, zucchini, and onion.
- Heat a grill pan or outdoor grill with avocado oil. Place skewers onto hot grill (pan) and cook, turning every few minutes until fish is cooked through and opaque (about 15-minutes).
- Serve 2 skewers per person with ¼ cup tzatziki.
