ingredients
- 1 pound cooked salmon (Perfect Fish recipe or canned salmon)
- 1 cup Persian cucumber, diced small
- 1/2 cup red onion, diced small
- 2 tablespoons chopped parsley
- 1/4 cup lemon juice, or to taste
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt, or to taste
Instructions
- In a large bowl, flake fish, add remaining ingredients and combine thoroughly. If you prefer a creamy salad, use 1/4 cup Aquafaba Mayo or avocado oil based mayo instead of lemon juice and olive oil.
