Cauliflower is a favorite at NYOUTRITION. This humble cruciferous veggie is loved for its high fiber, low calorie, phytonutrient-packed versatility. Delicious raw with a pinch of salt, as a healthy replacement for starch, or as it is here - simply roasted but a little dressed-up with the lovely addition of caramelized balsamic.
1 head cauliflower, cored and chopped
1 T olive oil
2 T balsamic vinegar
1/4 t sea salt
- Preheat oven to 350 degrees.
- On a parchment-lined baking sheet, toss all ingredients until combined.
- Roast in oven for 15-20 minutes (tossing once) or until browned, but still tender crisp.
