Makes 1 onion
The next time roasted veggies are going in the oven, add one of these beauties for something unexpected and your daily dose of disease-fighting alliums. The "petals" pull apart like an artichoke. The aroma in the oven is wonderful.
1 red onion
1 T olive oil
1/4 t sea salt
Preheat the oven to 350 degrees.
Peel the onion and slice off the root to create a flat surface. Cut the onion from top towards the root, leaving 1/2" at the bottom.
Coat the onion with oil and a sprinkle of salt and place in a baking dish and cover with foil.
Bake for 25 minutes or until onion "blooms". Uncover and bake for another 10 minutes.
