Spring gets me excited about a lot of things (Summer, mostly). In the meantime, I'm loading-up on one of my favorite veggies - artichokes! A wonderful source of prebiotic fiber and and a cholesterol-lowering compound called cynarin. Not to mention delicious. I love this puree with eggs, fish, chicken or as an alternative to hummus.
1 package frozen baby artichokes, thawed and squeezed of water
2 cloves fresh garlic, chopped
Handful fresh parsley, chopped
Juice of 1 lemon
2 T olive oil
1/2 t sea salt
- Place all ingredients in a high speed blender or food processor and blend until smooth.
