BASIL-ARUGULA PESTO

I am a huge pesto fan - it's so easy to make and really packs a flavor punch on just about anything - pasta, meat, fish, chicken, veggies.  This version simply substitutes half the basil with arugula, which gives it a nice pepperiness and ups the nutritional value with a healthy dose of phytonutrients.

INGREDIENTS:

2 cloves fresh garlic
2 T pine nuts, toasted lightly in a pan over medium heat until fragrant
2 oz fresh basil
2 oz baby arugula
1/2 t sea salt
1/2 c parmesan
1/2 c extra virgin olive oil
 

DIRECTIONS:

Place all ingredients in a food processor and start blending.
Slowly add olive oil.
Process until smooth.
