Makes 2 cups
Thanks to year-round availability of frozen sweet petite peas, you can enjoy this springtime treat anytime! Herby and lemony, its a fantastic spread on a crusty baguette, in place of traditional hummus on a sandwich, or a dip for crunchy veggies.
1 garlic clove, chopped
1/4 cup Italian parsley, chopped
1 T fresh chives, chopped
1 t fresh dill, chopped
2 T olive oil
2 cups fresh shelled or thawed frozen peas
1 T fresh lemon juice (or to taste)
1 T grated lemon zest
Sea salt to taste
Place all ingredients in a food processor.
Blend until smooth.
Season to taste.
