Is there anything better than a spicy, warming bowl of noodles? For busy days, stay stocked with goodies like rice vermicelli, hearty stock, and whatever veggies you like. It's a 10-minute healthy hangry rescue. Just top with a bit of kimchi to elevate the flavor and get a nice boost of probiotics.
1 package Asian rice vermecelli
32 oz. stock (beef, chicken or vegetable)
1 t sea salt
1 cup kimchi
1 head bok choy, trimmed and chopped
8 medium radishes, trimmed and sliced
4 t toasted sesame oil
Bring stock to a boil in a large pot. Add noodles and cook for 5 minutes. Cover and set aside for 2 minutes.
Divide noodles and broth among 4 bowls. Season with salt.
Top with bok choy, radishes and kimchi. Sprinkle 1 t sesame oil on each bowl.
